Waterford Cheeses

County Waterford is home to one of only two sheep’s milk cheeses made in Ireland.

Wolfgang and Agnes Schliebitz make both the superb Knockalara Cheese, and a Knockalara Feta preserved in oil.

Both are utterly distinctive: the original mild and citrussy, slightly crumbly and with a wanly yellow colour, whilst the feta in oil is one of the very best you can buy anywhere, a perfect alliance between the sharply defined flavour of the cheese and the fresh, slightly viscous oil.

You will find them in good delis, and they are also used to great effect by local chefs.
