Mary Morrin’s Pies

Food lovers are pie lovers, and no one makes a better pie than Mary Morrin, who bakes for her local country market in Naas on Friday mornings, and has also established a little farm shop, at her house just outside Kilcock. If you love fine crumbly pastry surrounding enticing fillings, then this is a place of pilgrimage on Fridays, when the shop is open from 3-8pm.

There isn’t a weak link in Mary’s work, and she is blessed with having her own butter and milk to work with, along with their own beef and vegetables: fab steak and kidney pies with a hot water pastry; sweet lamb scented with cumin; sublime pear and Roquefort pie; excellent salmon with dill and fennel, the ever-popular chicken and ham; the terrific apple and Stilton tarte tatin. Pie Heaven.
