That is why we are all happy to travel to Blacklion to eat and stay in this extraordinary restaurant, for we enjoy the cooking of the local man in his locality, in his world. And what cooking: inspired, technically immaculate, passion-filled: mallard with lentils and roast garlic; veni- son with cabbage and chocolate sauce; quail with truffle and pea risotto, and those grandstanding desserts – pear croustade with vanilla parfait; raspberry panna cotta; figs in crème cassis, brilliance in every bite.
