This quote, from the truly great Andoni Luis Aduriz
of Mugaritz restaurant in Spain’s San Sebastian,could have been coined to describe the cooking that Harry McKeogh and Falk Hammer are producing right now in The Cherry Tree. “Not the conventional wow! attack of flavours, more a subtle discursion through tastes and textures” was what we noted after a superlative dinner this year. We also noted that the terrine of king crab with basil mascarpone, and the roast Barbary duck with
rosemary dumplings, were both particularly special, but in truth dinner for all the McKennas was simply flawless, and we loved the fact that unusual ingredients such as kohlrabi, celeriac, and razor clams were used. Just fab.
