Like their parents before them, Conor and Ronan Maher are not simply masters of hospitality, and purveyors of seriously good food. They are also alephs – points of visualisation – for the sweet little town of Carrick-on-Shannon.


It is guys like these who make a town what it is. They work with local producers and use their ingredients superbly. When a journalist from The Guardian was writing about Food on the Shannon, the boys could turn to the Leitrim Organic Farmers and the Organic Centre “and so we cooked the lamb off with some local organic veg – baby spinach bursting with flavour – and Tom Maher’s rosemary with wild mint mash and it all went down very well”. We bet, and now you know where you will get the best cooking on the Shannon. At weekends, food is served in the little back bar as well as upstairs, smart food teamed with great wines: Tom Beirne’s pork with spaghetti of carrot and courgette; Paddy Sheridan’s lamb with pea and mint mash; darne of salmon wrapped in braised leeks; warm chocolate fondant with pistachio ice cream. Ace food, and an ace place.

Lunch noon-3.30pm Mon-Wed; noon-2.30pm Thurs-Sat; Dinner served 6.45pm-9.45pm Thurs-Sat.
