“Paul and his team were welcoming and generous. We
loved it!”

It’s funny how some correspondents, with just a single sentence, can get straight to the heart of what makes a place work. Paul Carroll and his crew are welcoming. And they are generous. That welcoming nature, that generosity with time and effort, is why Ghan House is such an outstanding place to stay and eat. The narrative of Ghan House, the story of its hospitality, is based on making you feel welcome, and generously offering all the things you need. Without it, this would simply be a fine old house on the outskirts of a lovely village But with it, the place is transformed into something magical. The cooking celebrates their location on Carlingford Lough and its fine fish and shellfish, and the availability of great lamb, beef and local mushrooms: crab ravioli with steamed samphire; gnocchi with wild mushrooms; Cooley lamb with blue cheese and tarragon soufflé; Cooley beef with bearnaise. You will love it, my dears.
