Simon McCance is, in many ways, the ideal
Bridgestone chef. He does things in an entirely
individual way.

Everything that comes out of the kitchen has his signature style of punchy flavours, accessible tex-
tures and a handsome mien. His room is unpreten -tious, his choice of music is excellent, he offers great value for money, and there is no nonsense to him and his bistro in any way. That’s what we like at Bridgestone Central. That’s what we would call “fine dining”. If you want “fine dining”, then first get rid of the tablecloths, and write your menu with expressions such as “dauphinoise on the side”, or “fish and chip shop haddock” or “home cut fat chips”, and confine your wine list to one line descriptions of the wines, such as “low yields and handharvested”. Mr McCance does all of those things, which is why Ginger is one of Belfast’s best restaurants, and why this bistro offers one of the most satisfying experiences you can enjoy any -where. For some authors, “fine dining” and “bistro” don’t belong together. Of course, we disagree,
and Simon McCance’s Ginger is our proof positive.
