Elizabeth Bradley’s raw milk cheese uses Edammer culture along with the milk from her herd of Blondes d’Aquitaine, some rennet and salt.

The result is a cheese aptly described by Elizabeth as “mellow” – sweet, fudgy, subtle flavours mark out a distinguished new addition to the farmhouse cheese pantheon in Ireland, and it will be fascinating to see this cheesemaker develop. In addition to local farmers’ markets, there are also farmgate sales, and do look out for the limited productions of flavoured cheeses – nettle; cumin; chilli; tomato and basil.
