Geraldine Bass smokes organic salmon using beech and oak, and the result is very fine indeed.

The smoke notes are very subtle and delicate, more like a halo of flavours rather than anything direct, and it allows the piscine flavours greater prominence and makes for a salmon that is superb served as sushi. This is very fine work indeed, and Old Millbank fish deserves a place up with the best-known Cork fish smokers.

You will find these delicately smoked and hand-sliced fish for sale at local farmers’ markets in north Cork and in good shops in Cork – it’s for sale in mywine.ie in Mallow. There is also an old Millbank smoked trout, and some fine fish cakes and terrines.
