Dan and John Hegarty’s territorial-style cheese is made from the milk produced by their herd of Friesians when out on spring and summer grass. The cheeses are made into 20 kilogram truckles, wrapped in cloth and matured for a minimum of 12 months. Hegarty’s is a very accessible and pleasing Cheddar, with hints of toasted nuts and a full, open creaminess. | |
