In a few years time, when Curraghchase pork products are a staple of every distinguished table, we will look back and wonder at the capability of Caroline Rigney, and marvel at how one woman established such a distinguished pork production empire. | |
Mrs Rigney is a formidably gifted woman, as her pork products show, and as her house and farm – and her farm shop – testify on her behalf. She always had a yen for keeping rare-breed animals, and has slowly turned her interest into a dynamic gourmet enterprise, based on the farm, with a sparkling farm shop and production unit built just across from the house. But this is just one element of what she does, for even before the pork business she was running her house as a B&B. The rooms are comfortable, colourful, cosy, and Rigney’s makes for a brilliant location in north Limerick, and its just close by Curraghchase Park. Food lovers, of course, will be more interested in Curraghchase Pork than in Curraghchase Park, so make sure to pack that cold box. |
