When we look back from the midst of recession at
what the boom years of the Celtic Tiger have be-
queathed to Ireland’s hospitality culture, there will
be many vulgar monuments to excess, and bad taste littered throughout the island. Bellinter, happily, isn’t one of those.

Jay Bourke’s country house hotel is one of the good guys, a beautifully restored – rather than renovated – house, where the scaffolding of high-tech systems that make it work for the traveller are buried beneath the surface. This is a house that knows what luxury actually is: cocoon-like rooms that are just the right size; superbly confident service that is understated in manner; a pool that gets our vote as the best pool in the country.
