The irrepressible Billy Forrester, of Cork's bubbly firm Bubble Bros, has expanded his wine portfolio, with an exciting new range of wines from the Languedoc. Our favourite, from a range with impressive typicity which also offers very good value, was the amusingly named 'Le Mas au Schist', from Domaine Rimbert, so named, according to Billy, because the temperatures in the vineyard are so high that only someone hell bent on punishing themselves would work there. Otherwise, the basic Domiane de Jouclary range make smashing everyday wines, and for a treat try the sweetly fortified wines of Mas Amiel.
