However often we may argue about just exactly who are the most cutting-edge cooks in Ireland, the name of William O'Callaghan of Longueville House, near Mallow in County Cork, will always be amongst the front runners. Mr O'Callaghan's inspired mix of an authoritative culinary technique with an instinctual appreciation of the best ingredients is dazzling, and it makes Longueville one of the greatest addresses.

And now, food lovers, a rare chance to not only see this technique at close quarters, but to actually learn how to do what Mr O'Callaghan does. Mr O'Callaghan is commencing a series of 3-day cookery courses in Longueville, where participants will stay in this gorgeous house, have demos in the mornings, with afternoons free to explore the Blackwater Valley, and then back to Longueville in time for dinner.

You arrive on night 1 for dinner, then the next morning has demonstrations from 10.30 to 12.30 before lunch, with the afternoon free. There are 2 demonstrations on the 3rd day, then another free afternoon. The cost for the demos and 3 nights dinner and bed and breakfast is IR295, which is cracking value. So, learn all about breads, pasta, the use of garden vegetables, and many lamb dishes amongst other things, whilst at the same time having a break in this magnificent house.
