He has taken our so-called 'traditional' dishes and shown that they can be interpreted in a confidently and authoritatively contemporary way, without a hint of pastiche or irony. Dazzling crubeens with ham hock; brilliant Irish stew; thrilling fish cake with poached egg; fantastic bread and butter pudding, are all executed to benchmark status.
