Caherbeg Free Range Pork is awesome stuff: fantastic sausages; brilliant bacon, superb pork cuts, foods so good they demonstrate the sheer nobility of the pig. Avril and Willie started by taking over Roscarbery Recipes pork products and re-energising those splendid sausages, but their own range of pork products should not be missed by all those who seek a true porcine treat.

'If I were voting for food-related awards, I'd pick the organically raised pork from Ballymaloe House. We sampled it at a launch for Darina Allen's new book, at O'Connells Restaurant in Bewleys Hotel, Ballsbridge. It was roasted with gooseberry sauce. Never have I tasted anything sweeter, tenderer, and the crackling was to die for!'
