Off The Shelf
Sarawak
Sarawak is a word you may not be familiar with. We weren't until recently. It is, in fact, a region in Sri Lanka which has always been a great exporter of peppercorns. With regionality becoming a sexy selling device in these times of mega brands, Sarawak pepper is now a sought after ingredient (rather than just plain ordinary pepper, freshly ground as they say in all good books.) We've spotted it on at least two international menus.
The good news is that Terroirs sell Sarawak pepper, and
very wonderful it is too, in the form of Alain Ducass'e peppercorn mix
(c. £5.85).

Another pepper mix we found we suddenly need, is the Organic
Herb Company of Ireland's jar of mixed peppercorns, a melange of white,
black and pink peppercorns: crush this over a sizzling steak and your'e
motoring.
