Zuni in Kilkenny has been the hottest spot in the country in 2002, and it leads the way in a whole new concept: the boutique hotel in the country.

Okay, so Kilkenny is itself a city, but Zuni prefigures the move of stylish rooms and stylish food (at fantastic value) away from the grip of the metropolis, and out into the regions.

Expect Starck-style grooviness in Longford (okay, so we're optimistic) and moody minimalism in Termonfeckin. Can Termonfeckin handle any more moody minimalism?!
