Delicious Drimcong, Open for One More Season
Gerry Galvin, of Galway's unique Drimcong House, continues to ply his trade
in the noble and sophisticated way that has been his signature for three
decades. The 2000 menus for Drimcong show a chef whose style edges ever
closer to utter simplicity: hot seafood gateau in wild garlic sauce; lamb
shank with savoury risotto; confit of duck with spiced lentils; vegetarian
rice cake with sweet and sour vegetables; hot lemon and rhubarb pudding;
chocolate mousse cake with raspberry sauce. Beautiful, elemental cooking,
and we are fortunate to have a chance to still enjoy it.
