One of the highlight's of the 2002 series of courses at the Ballymaloe Cookery School is a rare appearance by Café Paradiso's brilliant Denis Cotter, who will cook on Monday, June 24th, for one day only; don't miss this chance to see the most mould-breaking vegetarian cooking imaginable, and see Menu of the Month, below. Mary Dowey returns to impart her intensive wine course, with Jonathan Ray in April, and Francophiles should not miss Eric Treuille, of London's Books for Cooks, who teaches for two-and-a-half days in early May, with an intriguing series of demos including chicken, lamb, pasta sauces, flavoured breads and canapés.

And one of our favourite cooks, Danette O'Connell, returns to Michelle Power's Cottage Garden Herb Farm to teach her great skills; eating al fresco on June 15th, vegetarian cooking on July 6th, and Mexican cooking on July 20th. Danette's classes are just part of the series of classes run by Michelle at Ballyconnell Lodge, at Tullow, County Carlow, and there is a range of courses from decoupage to keeping poultry on a small holding.

We are just about to wrap the Bridgestone 100 Best in Ireland Guides 2002 as we write, so the stress levels are high, the sleepless nights commonplace. If this was a movie, our fairy Godmother would appear and whisk us off to Kelly's Resort Hotel in Rosslare, the chill-out zone par excellence, so we could unwind, enjoy Eugene Callaghan's cooking in La Marine, and maybe take in some of the smart courses Bill Kelly and his team put together for Spring. Okay, so we have missed Celia Larkin advising us how to have a "Total Image" (by the by, is it because of Celia that Bertie no longer wears a duffle coat? Only asking.) but what we would like are the courses on Modern Irish Art & Artists, running from 14th-19th April. Kelly's has one of the finest collections of modern Irish art, so a few days spent appreciating the Kelly family's great taste would be just the ticket.

The prize for the most distinctive and idiosyncratic series of classes is always the preserve of the Goodwillie family of Lavistown House, in County Kilkenny, whose inspired excursions take them and their students into the realms of birdsong, garden design, exploring the Burren, orchids, breadmaking, fiction writing and a cheese experience with Seamus Sheridan, amongst others. We did the mushroom hunt one year, and it was unforgettable.. Small groups of highly motivated students make the Lavistown courses a pure blast; don't miss 'em!
