Kenmare's Sheen Falls Lodge has just produced a tiny recipe book to celebrate their first ten years in business. This handsome little booklet is a tribute both to Fergus Moore, who directed the kitchen for the first nine years, and to Chris Farrell who has succeeded him and who, for our money, is currently producing some of the most impressive food you can eat in Ireland. What is so delightful about Chris's cooking is the precision crafted with every detail of a dish: something like oven roast breast of squab pigeon, lentil du Puy, spinach mousse, smoked belly of pork and thyme jus, for example, is a dish just waiting to make a mistake, but the care this kitchen lavishes on the food means it comes out as a wowee! success, with every element simply perfect.
The Sheen Falls is offering autumn breaks, and is open for both Xmas and the New Year. You can take us there anytime.
