Jp McMahon and Drigin Gaffney are out of the box. Sure, sure, Galway does out of the box, but these guys are out-of-the-box-different: he is winding up a Ph.D in art history and teaches in U.C.C.: she has a masters in Theatre Studies. Oh, and they run three Galway restaurants. See what we mean? Way, way out of the box. Their premises – Cava; Aniar, and Eat in Massimo – ring all the changes: tapas and Spanish drinks in Cava; cutting-edge cooking – and craft beers - in Aniar; smart pub food in Eat in Massimo. McMahon and Gaffney approach their food with the zeal of academics, but they are Indiana Jones academics – they get a kick out of what they do, they want you to go on a culinary journey with them where they will find all the interesting stuff no matter what it takes, and they don't have to mark term papers in this job.

It's a nice gig for them, and it's a nice gig for the customer, who gets authenticity along with deliciousness. In a years' time, they will be famous. Really famous. Mr McMahon's studies, by the way, focus on 20th century American art, so he knows the path all the way from the Sublime to Andy Warhol.
