The Exchequer is what the Irish pub scene needed, and needs more of”, says Caroline Byrne. “It’s a seriously good bar, with a drinks list boasting a nice selection of decent wines by the glass, an admirable line-up of beers and spirits that goes way beyond the typical offering (especially for rum fans), and a fine lot of outstanding cocktails created by resident champion mixologist Darren Gerraghty. It also does seriously good food: hearty and great value, offering a broad range from classics – such as Doran’s smoked chowder with potato and leek – to original and innovative dishes that combine great Irish ingredients to create things of pure deliciousness, like the moreish Irish whiskey and apricot bread and butter pudding with honey and ginger ice cream. The Exchequer also does a terrific deal on a Sunday roast (rib of beef for two, rack of pork or roast chicken for four) with all the trimmings and a bottle of house wine for only 40 euro. Peter and Ian know how to do gastropub, and they’re doing it brilliantly. Behold the Irish gastropub, and how it should be done
