There has always been something sunshiney about Richard and Trish Hudson. Even when they were in the far-from-sunshiney confines of Navan, in deepest County Meath, they always seemed as if they were channelling a better source of light then everyone else, and Richard's cooking has always enjoyed a tropical energy, with a need to locate his culinary palette in the lands where the lemon trees grow.
That fusion of influences, from Mediterranean Europe and Northern Africa, leads to dishes that ill put you in mind of Diana Henry and Claudia roden: zarzuela; Greek lamb; saffron risotto with scallops; calamari with hrissa. The room is simple, as it should be, and they advertise “the best crispy chicken wings that you have ever tasted”. Reason enough to head way out west.
