Jackson’s is the sort of place about which you receive unsolicited emails which will tell you that, for example, there is nowhere in Galway producing food of the quality that Geraldine Garvin is firing out here in Market Square.
Michael is careful about sourcing wines, and Geraldine likes clean, distinct flavours in each dish, such as a warm duck salad that boasts a saffron poached pear and pitted green olives.
