Lisloughrey is one of a trio of boutique hotels – the others are the renowned Wineport Lodge in the Midlands, and Ballina’s brilliant The Ice House in the North West of Mayo – who form a loose coalition.
They are united by great service and great style, and all three destinations are superb, and all three are in this book. Lisloughrey is already a regular award winner for hospitality, and for its cooking from chef Wade Murphy.
The Lodge has a gorgeous location, with Ashford Castle next door, and the sublimely pretty village of Cong on its doorstep. As you would expect from this trio of addresses, attention to detail in the public and private rooms is fabulous: there is real style here, and a real enjoyment of style and luxury, yet nothing ever goes over the top: this is calm luxury that leaves you feeling spoiled. Salt restaurant has views over Lough Corrib, and some seriously creative cooking from Mr Murphy. That they have achieved so much so quickly is amazing, and there is a lot more to come from Lisloughrey. A lot.
