Ronnie and Tim, manager and chef of Renvyle House, are one of the great double acts in Irish hospitality and food. Between them, Mr Ronnie Counihan and Mr Tim O’Sullivan have created a manifesto for Renvyle that is one of the most compelling examples of contemporary Irish ingenuity.
It means that Renvyle looks like an hotel and has the scale of an hotel, but feels more like a country house. It means that the food is cutting edge, and yet is also simple and unpretentious, earthy and agrestic, smartly sourced from excellent local artisan suppliers. It means that Renvyle feels traditional, yet is as modern as you need it to be.
Reconciling all these seeming contradictions takes a particular form of genius, and these two genial blokes have it in spades. Genial geniuses seems just the right way to describe them, and this beautiful house is fortunate to have two guys who so completely understand it and appreciate it, and are thereby able to present it at its best to guests. There is no more soulful, relaxing place.
