Everything you love about Japanese food – the use of colour; the sense of proportion; the deep wisdom; the quiet focus on nutrition; the enlivening hit of umami flavours – can be found in the small, perfectly-proportioned space that is Yoshimi Hayakawa's Wa Café.
Our last visit here was a Sunday morning breakfast excursion, where we enjoyed beautiful green tea, miso soup with wakame; chicken teriyaki; Japanese sushi rolls. It was a quintessential Galway moment: things happen here – like having miso soup with wakame for breakfast on a Sunday morning – that don't happen anywhere else in Ireland. Pure Galway. Pure Wa Café. Ms Hayakawa and her crew prepare beautiful food – simple, soulful, generous, respectful – and serve it with the utmost grace. Ms Hayakawa hopes to open a Sushi Academy in the future: sign us up, for we want to know the way of Wa.
