David and Julie have been at the helm of the beautiful Wild Geese restaurant for a decade, and have done nothing more during that time other than get better, and better, and better. The secret of their success is simple: the alliance of their respective talents is an extraordinary synthesis: she is magisterial at front-of-house, he is dynamic and creative in the kitchen, and we mean it when we say there isn’t a better him ’n’ her team in the country. They’re the tops, they’re the Mona Lisa. Put this lovely cooking and sublime service together with the most romantic dining space – this may actually be the MOST romantic room in the country – and you have nothing less than magic. The food is simply adorable, well-crafted and understood, and ever since we first ate Mr Foley’s food in a Dublin hotel – back in the day, as they say – we have never known him to produce a bad dish. So, Curraghchase sausage with champ and smoked bacon jus, or perhaps cod and crabmeat with a mussel and clam risotto, or Adare spring lamb with rosemary. Perfect in every detail.
